Maltese Sausage and Potato Ftira

A Maltese style sandwich. Simple toppings, amazing flavour! If you do not have the peppered goat cheese you can substitute with a normal mild goat cheese. If you have a sandwich grill you can avoid cooking the potatoes in advance and just place them immediately to toast in the grill. 




Ingredients:
Makes 2 servings
  • 2 Maltese Ftira or ciabattas
  • 1 Maltese sausage
  • 1 big potato, sliced very thinly
  • fennel seeds
  • 1 peppered goat Cheeselet (Ä¡bejna), sliced thinly
  • 1 medium onion, sliced
  • butter (to spread)
  • salt and pepper
  • olive oil
    Directions:
    Heat a small amount of oil in a saucepan and fry the onions until golden. In the meantime remove the skin of the sausage and cut into small pieces. When the onions are ready, remove from the pan and put aside. Put the sausage pieces into the same pan and brown for a couple of minutes. When ready, set aside and cook the potatoes for a couple of minutes until tender (if you have a grill you can skip this part)

    In the meantime divide the Maltese bread or ciabattas in half and spread lightly with butter. Divide the onions, cheeselet and sausage between the four pieces of bread, then top with the potatoes. Lightly salt and pepper and sprinkle with fennel seeds, then drizzle with olive oil. Put under a medium hot grill and toast for 3 to 5 minutes, until the potatoes are golden and the bread is warm.
